People will argue there’s no such thing as leftover Christmas chocolate but realistically we all end up with it. This wee cheesecake is a great way of using it up to create something special. The beauty is you can add whatever leftover chocolate you like, which keeps you guessing with every bite. It's a great dessert for the New Year celebrations and to polish off the last tubs of Christmas chocolate.

Turn cooking mode on

Step 1

Blitz your biscuits up and pop these into a large bowl. Pour in your melted butter and mix until fully combined. Fire this into your cheesecake tin, pressing into the base and smoothing out. You can pop it into a fan assisted oven for 5-10 minutes to crispen the base slightly, then allow to cool but this is optional. If not place in the fridge.
