Step 1
Stuff your lemons, garlic and thyme up the chicken's arse. Fire your favourite vegetables around the chicken, I went for onion, carrots, parsnips, aubergine and green beans. Plaster your chicken in plenty of butter, this will give the skin a delicious crisp crust. Season well with salt and pepper. Sprinkle over some more thyme and add more garlic cloves around the bird amongst the vegetables.
