Black Forest Gateau

This is a classic of my Nanny's and potentially my Granda's favourite. I was always a bit daunted by the recipe but it's surprisingly handy. Honestly any recipe I create and upload, means your more than able for it. The sponge is beautifully light and delicious. Paired with the cherries and cream make it a winner in our book!

Step 1

Add your eggs to a mixing bowl along with your caster sugar. Whisk this on a high speed until it becomes thick and pale. Sift your flour and cocoa powder into a separate bowl. Gradually add this, folding gently in with your whisk head. Scoop from the bottom and up and around to get all your dry ingredients. Be careful not to over mix as you want to keep the air pockets you developed.
