Fluffy Pancakes

These pancakes are the fluffiest I've made with the least effort. They are perfect for quick lunch or that easy weekend breakfast we all love. The mai question is, what toppings do you go for? I'll always stay strong and say lemon and sugar. But some of the combinations around these days might convert me. Method

Turn cooking mode on

Step 1

Sift your flour, bicarbonate of soda, salt and caster sugar into a bowl. Give this a wee whisk to combine. In a separate bowl add your eggs and lightly beat these. Pour your milk and eggs into the dry ingredients, as well as your vegetable oil. Gently combined because you want to keep the air pockets. It will give you a nice thick batter. Allow this to sit for a few minutes whilst you heat your pan.
