Easter Simnel Cake

I’d never heard of an Easter Simnel Cake but my Nanny showed me the ropes with her recipe. It would put you in the mind of a Christmas Cake but completely different according to my Granda! Moist and full of juicy fruit, with a hint of light spice and not forgetting the sweet almond marzipan. It’s pretty cool learning about any recipe but especially these old traditional ones. I even got a history lesson on why you place 11 marzipan balls on top.

Method

Turn cooking mode on

Step 1

Add your butter to a mixing bowl along with your light brown sugar. Beat these really well until they're light and fluffy, scraping down the sides of your bowl midway through. Fire your eggs in, self-raising flour and mixed spice, slowly mixing until combined. Again scrape the sides of your bowl midway through to ensure it's mixed well.
