Summer Fruit Roulade

This roulade is a great show piece for a gathering or equally just to have as wee weekend treat. It has a slight chew on the crust but ohhh so light and delicate inside. The recipe uses the brilliant seasonal fruits we have but you could substitute those with anything you'd prefer. Either way it's delicious and the fact it's so light you could polish off a few slices no bother!

Method

Turn cooking mode on

Step 1

Ensure your mixing bowl is totally clean and dry before adding your egg whites. Whisk these on a high speed for a few minutes, until they become white and frothy. Gradually add your caster sugar a tbsp at a time, whisking for about 15 seconds between each addition. Whisk until it firms up and develops a nice shine. Finally scrape the bottom and sides ensuring it's totally combined and give it one more dig with the whisk.
