Parmesan and Chive American Biscuits

We had what the Americans call 'biscuits' on our trip, but they're clearly not like digestives. I'll give it to them though, they're bloody delicious. I had to recreate a parmesan and chive version we got for dinner one night and they weren't a slap off the arse away from it. Sorry that's my local Northern Irish slang coming out, they were just as good if not better. They've a lovely crisp coating and buttery soft flaky layers inside. When I mean buttery I mean buttery. They're highly addictive and I know now why they're so popular.

Method

Turn cooking mode on

Step 1

Cube your butter and pop this into the freezer so it's nice and chilled. Sift your flour into a bowl and add your caster sugar, baking powder, bicarbonate of soda, salt and pepper. Give this a wee whisk to combine. Add your cheese and mix throughout.
