Massaman Roast Chicken Dinner

I love a roast chicken but equally love trying to put a spin on it. One of my favourite curries has to be a Massaman so I had to give it a try. It had that mild spice you'd expect yet sweet, savoury, and tangy, with a rich, creamy coconut sauce to accompany it. I absolutely loved it and even had my Granda realising you don't judge a book by it's cover. My presentation skills need work but I always try my best to provide simple, tasty recipes that are realistic for anyone to make. It doesn’t have to look perfect or win any awards for presentation, it's what it tastes like.

Method

Turn cooking mode on

Step 1

Start by bashing your lemongrass with a rolling pin. Shove two quarter pieces of your lime up the chickens arse, along with your ginger, garlic cloves, lemongrass, star anise and dried chill's. Tie up the legs of your chicken and scatter you onions and peppers around this. Mix your massaman curry paste and olive oil together in a bowl. Fire this onto the chicken and plaster it all over. Season the chicken with some salt and pepper.
