Nanny's Apple Cake

My Nanny had this wee apple cake recipe and it’s one of the best I've had yet. It's extremely light and has a lovely sweetness and gentle spice flavour. Then with the sweet and tarty bramley apples it really becomes the perfect combination. Not forgetting some thick custard for good measure. We're spoilt with the local produce here so I really encourage you to make the most of what's available. It's not just the taste that's superior, you're supporting the wee local businesses and farmers that are so special to the community!

Turn cooking mode on

Step 1

Add your butter, caster sugar and light brown sugar to your mixing bowl. Cream these together until they're light and fluffy. Scrape the sides of your bowl midway through so it's fully combined. Next add your eggs one at a time, beating these together between each addition.
